Ingredients
Chutney
- 1 clove garlic, large
- 1 large onion quartered
- 2 cm ginger
- 650 g Plums - stoned
- 75 g dried apricots
- 6 serrano chilies whole(red), (very hot)
- 2 tsp salt
- 360 g brown sugar
- 1/4 cup sweet sherry, (optional)

1. Place garlic, onion and ginger into the bowl and chop 3 seconds speed 7. Scrap down sides.
2. Add plums, apricots and chillies and chop 5 seconds speed 5.

3. Add sugar, salt and sherry and mix 2 seconds speed 4.
4. Cook for 15 minutes, 100 C, reverse, speed 2.
5. Reduce heat and cook for a further 15 minutes, 90 C, reverse, speed 2.
6. Pour into sterilised glass jars, seal cool and refridgerate.

I love spicy but I agree next time I will add 1 less chilli but I have to say the sweet of the plum with the chilli is absolutely out of this world. Lovely recipe thank you
Very tasty, but I only used 4 chilies and it was still a bit hot for our tastebuds. Next time I will try with less chilli, if you love it hot & spicy you will love this chutney.
