For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Place yeast and 50g of the water in the bowl. Insert measuring cup. 2mins, 37 degress, sp 1
- Add the semolina, flour and salt.
- Start the dough kneading function "Dough mode" and slowly add the water (around 20 sec). Keep kneading for 2 minutes.
- Cover the mixing bowl with a cloth and leave for 2 hours or overnight
- Preheat the oven to 180 degrees
- Rollout the pastry as thin as you can (I used a pasta roller)
- Cut into rounds with a 5cm cutter and prick each one in the middle with a fork. I used a 3 prong dessert fork to get the traditional markings in the photo.
- Place on a baking sheet or paper and bake for 10-12mins until just turning golden brown. Some will puff up which is what they are supposed to do.
- Enjoy with cheese or dip.
