- 1x large apple
- 2x smal/med banana
- 50g pitted dates
- 30g Coconut desiccated
- 220g SR flour (Wholemeal is fine as well)
- 100g Veg/Grapeseed oil
- 190g milk/coconut milk
- 110g raw sugar
- 1 egg

1. Core apple and cut into quaters add to bowl & pitted dates. Turbo 2sec x 2. scrape bowl inbetween.
2. Add banana mix 5sec / sp 5.
3. Add oil, milk & egg 10sec/"Counter-clockwise operation" sp5.
4. Add SR flour, Coconut & sugar; 5sec / "Counter-clockwise operation" sp4. scrape the bowl and repeat 2sec/"Counter-clockwise operation" sp4.
5.Spoon a table spoon of mix into each mini muffin hole.
6. you can lightly sprinkle some raw sugar on top if you want.
Bake 10-12 mins. Allow to cool for 2 minutes in tray then remove onto cooling rack - so they dont sweat

** Sugar can be less or alternatives like coconut sugar or rapadura. Dates give little caramel bursts of sweetness naturally.
Pre Heat oven to 180'. light spray mini muffin trays

Mine were moist, borderline doughy, but nice flavour! I had only made half the amount, but with a whole egg, so maybe that was the problem. Will definitely make them again!
These are delicious! Reduced the sugar to 90g, they were still plenty sweet so will reduce sugar more next time.

For healthy little muffins these are great! I doubled the dates and didn't add sugar at all. And added a carrot with the apple. Lovely and a tick of approval from the kids!

Great after school snack. Used one banana, one green apple, one pear as that’s what I had. Reduced sugar to 70g then spinkled cinnamon sugar once baked.
ABCD health muffins: what a delicious recipe!
Made 48 mini muffins.
I mixed everything together except for the flour, until it was fine. Then added flour.
Used wholewheat self-raising flour.
Some changes to your reccipe:
I left out sugar completely but added a squirt of honey.
I used olive oil and did not usen any extra moisture like milk.
Almonds- I added a small handful as ours were eaten at home.
Baked 160 C fan forced for 15 min
I doubled the dates and didn't add any sugar, they were delicious!
All I can say is YUM!!!!!
