Ingredients

Chocolate Mousse Cake

  • 250 grams Chocolate Biscuits
  • 75 grams Butter
  • 800 grams Milk
  • 1.5 tablespoons gelatin
  • 60 grams raw sugar
  • 120 grams cocoa powder
  • 350 grams dark chocolate, 60% cocoa
  • 500 gram cream
  • Fresh berries, to serve

Recipe's preparation

    Preparation
  1. Line a 23cm springform pan.
  2. Place 250g chocolate biscuits in mixing bowl and mill for 10 sec/speed 7.
    Place milled chocolate biscuits in prepared springform pan.
    Use hands to press firmly in to th pan. Place in refrigerator.
  3. Place a bowl on mixing bowl lid, place 300g milk and 1.5 Tablespoons of gelatin, stir to combine.
    Set aside.
  4. Place 60g raw sugar in to mixing bowl, mill for 10 sec/speed 9.
  5. Add remaining 500g milk, 120g cocoa powder and 350g dark chocolate, and cook 5 min/70°C/speed3.
  6. Add gelatine mixture, mix for 30 sec/70°C/speed 3.

  7. Add cream, mix for 10 sec/speed 3.
    Pour chocolate mixture over refrigerated biscuit base.
    Refrigerate for a minimum of 4 hours or until set.
  8. Remove from springform and serve with fresh berries.

Tip

Variation: Use a set of mini springform pans and divide the mixture evenly between them for individual desserts.
