Ingredients
Lemon & Blackberry Friands (Nadia Lim's Recipe)
- 2 egg whites, medium
- 2 tablespoons plain flour, (or GF)
- 80 grams icing sugar
- 50 grams ground almonds
- 1 --- lemon zest, grated, of 1 lemon
- 60 grams Butter, melted
- 12 Blackberries, fresh or frozen, not defrosted

- 1. Prep the tin
Preheat oven to 180°C.
Grease a 12-hole MINI muffin tin with butter and dust with flour.
Tap out excess flour to prevent sticking. - 2. Melt the butter
Add butter (60 g) to the mixing bowl, melt 2 min 20 sec, 60°C, Speed 2.
Transfer to a small bowl and set aside to cool slightly. No need to clean the bowl! - 3. Lightly whip egg whites
Insert butterfly whisk. Add egg whites (2 pcs) and whisk 15 sec, Speed 3.5, until frothy.
Remove butterfly whisk - 4. Mix dry ingredients & combine batter
Add to the mixing bowl:
Flour (2 tbsp)
Icing sugar (80 g)
Ground almonds (40 g)
Lemon zest (from 1 lemon)
Melted butter (from Step 2)
Mix 10 sec, Speed 2, just until combined.(Use spatula to gentle finish combining if needed. Do not over-mix! The batter should be light.) - 5. Fill the muffin tin
Pour the batter into the prepared muffin tin, filling each hole ¾ full.
Place one blackberry on top of each. - 6. Bake
Bake for 12-15 minutes at 180°C, until golden around the edges.
Friands are ready when they spring back when lightly touched. - 7. Cool & serve
Let them cool in the tin for a few minutes, then transfer to a wire rack.
Dust with icing sugar before serving.

Ground almonds and icing sugar can both be made in the thermomix in advance if required.
