  • 120 g raw sugar
  • 125 g plain flour
  • 90 g rolled oats
  • 125 g Butter
  • 50 g golden syrup
  • 1 level tsp bicarbonate of soda
  • 2 level tbsp Boiling water

Recipe's preparation

  1. 1. Pre heat oven to 175°C and line 2 baking trays with baking paper
    2. Add coconut flakes to bowl, grate 15sec/sp5
    3. Add other dry ingredients to the bowl: sugar, flour and oats and mix 4sec/sp4Counter-clockwise operation"Counter-clockwise operation"
    4. Put dry ingredients in a large bowl and set aside
    5. Add butter and golden syrup to the bowl and heat 3min/100°C/sp1, or until the mixture has started to bubble
    6. Add carb soda to 2 tbs of boiling water, stir briefly and add to the bowl. The mixture will froth up and look like honeycomb
    7. Quickly pour the butter mixture onto the dry ingredients and mix together to a firm dough with the spatula
    8. Roll heaped teaspoons of dough into balls and place on tray
    9. Bake for 10-15 minutes at 175°C or until golden brown
    10. Once out of the oven leave the biscuits on the tray for 5 mins to cool and firm up before moving to a cooling rack.

Tip

- If you are using shredded coconut, grate for 10 se/sp 5 at step 2; if using desiccated coconut, skip step 2 and just add it with the dry ingredients at step 3.
- This is a conversion of my Mum's ANZAC biscuits which was a cup of each of the dried ingredients and the butter. I have reduced the sugar by a third.
- The biscuits keep well but don't necessarily last long.
- My Dad likes them a bit burnt.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
