Australian Women's Weekly Basic Buttercake

  • 165 grams raw sugar
  • 125 grams Butter, In cubes
  • 1/2 level tsp vanilla extract
  • 2 eggs
  • 225 grams SR flour
  • 125ml Milk

Recipe's preparation

  1. Place sugar in TM bowl and mill for 5 sec speed 10. Add butter and if it is straight out of the fridge chop for 5 sec spd 7. Scrape down sides and insert butterfly add mix for 30 sec speed 4. Add vanilla extract and mix for another 30 sec speed 4 and while doing this add both eggs in through the top while the mixture is mixing. Remove butterfly and then add in milk and flour mix for another 15 sec speed 5 scrape down sides and then mix another 15 sec speed 5. Pour into standard cake tin or patty pans (makes about 14 I fill them to about 2/3 full they rise quite a bit). Put into 180 degree fan force oven cup cakes take between 10 - 15mins cakes about 20 - 25mins

Tip

To make pouring the mixture out a little easier you can heat the mixture to 50 degrees in TM bowl as soon as it hits temperature remove and pour.

You don't have to use the butterfly I just included it because I thought it would help with creaming the butter and sugar but it is not essential.

    Has anyone used this recipe to make a 6 layer rainbow cake? I was wondering how much cake mixture I would need. I’m using 20cm tins. I’m thinking 2 batches but would love to hear from anyone that has done this.

    I made as per the instructions and made 2 cakes because I found that it didnt rise much and was a bit dence so thought I would try again but was no better. After reading the other comments I made a double batch and did as per M.Lydeamore's tips whipping longer with the butterfly and seems to have been more of a sucsess!

    Amazing! I have stuggled to find a yummy cake recipe to use for decorating my cakes. I doubled the mixture and baked for longer at 160 it rose perfectly. Will be put to use in many if my creations. Thank you!!
