Ingredients
Almond meal Banana Cake -Gluten free
- 3 portions banana (270 - 330 g), Over ripe is good
- 3 portions eggs
- 3 tbsp golden syrup
- 1 1/2 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 250 grams cups fine Almond Meal
- 100 grams cornflour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt (to taste)
- 50 g walnuts
Ganache Icing
- 250 g Dark cooking chocolate
- 1/4 litre cream
- 50 g walnuts
- 30 g almonds

- 1 Lightly grease a 200mm round cake tin and line with baking paper
2 Preheat oven to 180 C
3 Put walnuts in bowl and chop spd 6 - 3 secs - set aside
4 Combine Bananas, Syrup, Eggs, Vanilla and Almond Extract
spd 5, -10 secs (bananas need to be smooth) repeat if nec.
5 Scrape down sides then add Almond meal, Cornflour, Baking Soda, Baking powder, salt, Chopped Walnuts.
6 Mix Spd 4 -10 sec, scrape down sides then mix spd 4 -10 sec.
7 Pour into prepared cake tin and Bake 180 - 35 - 40 mins
GANACHE
1 Coarsely chop nuts Spd 6, -2 sec, Check & repeat if necessary
2 Break chocolate into squares.
3 Place broken chocolate in bowl & chop spd 8 -5 sec
4 Add cream and mix spd 3, 50 C, -3 mins
5 Place cooled cake on large plate and pour evenly over
6 Sprinkle with chopped nuts and cool
7 Slice and enjoy
