Ingredients
Apple & Walnut Muffins - Gluten Free
- 3 apples
- 200 grams almond meal
- 100 grams walnuts
- 70 grams dessicated coconut, lightly toasted
- 1 tsp baking powder
- 1 tsp vanilla
- 4 eggs
- 90 grams olive oil
- 1/2 tsp bicarb soda
- 1 tsp cinnamon
- 90 grams brown sugar

- Prepare 12 large or 24 small patty pans in a muffin tray
If making own almond Meal place 200 g Almonds in Bowl and chop 5 sec, Speed 6, Scrape down an re-chop, Continue till at desired fineness. - Set aside
Put walnuts in bowl and chop 3 sec spd 5, should be coarse, Set aside - Keep 2 tbl spoons for topping
Turn on Oven to 180 degrees fan forced
Place 2 1/2 peeled and quartered apples in bowl and chop 5 sec, spd 4 - coarsely chopped. The last half apple is finely sliced for toppings
Fit the butterfly attachment
Add all dry ingredients and vanilla, reverse mix 3 sec, spd 4, scrape down and repeat
Add eggs then reverse mix 3 sec, spd 4, scrape down and repeat up to 4 times
Spoon mixture into patty pans, Add apple slices and a sprinkle of chopped walnuts for topping.
Bake in oven 30 - 40 mins till golden brown on top and a skewer comes out clean.
Place aside to cool
Enjoy with a cuppa

Tip
If you mix without the butterfly, an air pocket around the blade will sometimes form (especially if you try to go faster than spd4) and you need to scrape down and pierce the airpocket to get it to mix again
