Ingredients

Muffins

  • 2 Apples
  • 300 g wholemeal flour
  • 150 g plain four
  • 2 teaspoons cinnamon
  • 200 g brown sugar
  • 1 tsp bi-carb.soda
  • 2 eggs
  • 375 g Milk
  • 100 g coconut oil

Crumble Topping

  • 35 g plain flour
  • 40 g coconut oil
  • 30 g oats (rolled)
  • 50 g brown sugar

Recipe's preparation

    Muffins
  1. 1. Core apples and place in jug. TURBO a couple of times until you have desired consistency. We like a fine chop

     

    2. Add all other ingredients in order listed.

     

    3. Mix for 20 secs, Speed 5

     

    4. Pour into muffin tray and top with crumble mixture

  2. Crumble Topping
  3. 1. Using a clean dry bowl, combine plain flour, coconut oil, oats and brown sugar for 5secs, Speed 3 Counter-clockwise operation"Counter-clockwise operation"

     

    2. Sprinkle muffins with topping

     

    3. Bake for about 20minutes or until browned at 200 degrees

    Oh my! Couldn't even wait long enough for these to cool, down before I tried it! Yum! Halved the sugar in the mix and only used plain flour as had no wholemeal. Made 24 good size muffins for me. Will definitely be making these again.

    Wow these are amazing 

    Had no wholemeal flour so substituted with Plain Flour. Forgot the milk (oops) so added it after initial mix and mixed again for 10 seconds. Made 24 Mini Muffins and 12 Regular sized. Only mentioning all this because they turned out perfect! Thanks for recipe!
