  • 260 grams Wholemeal Self Raising Flour
  • 60 grams raw sugar
  • 110 grams Butter, softened
  • 1 egg
  • 1 tsp ground cinnamon

Recipe's preparation

    Apple Cookies
  1.  

    Pre-heat oven to 180 degrees

    Chop apples in Closed lid"Closed lid" for 2 seconds on Speed 5. Set aside.

    Add the rest of the ingredients to Closed lid"Closed lid" and mix for 10 seconds on Speed 5. Scrape the bowl.

    Add apple and mix on Reverse for 10 seconds , Speed 5

    Place spoonfuls of mixture on lined tray, leaving room to expand. This makes approx 24 good size cookies.

    Bake at 180 C for 30 to 35 minutes or until the top is golden brown and a skewer inserted into the middle comes out clean

Tip

I first started making this to use up all the nibbled apples in my fridge from my toddler.

Just chop those bits off to make up about 3 apples worth from several apples

    300g Pink Lady apples peeled and seeds removed
    260g Self Raising Flour
    50g Raw sugar
    110g Shaved cold butter
    1 egg
    1 heaped teaspoon cinnamon

    Oven preheated to 170 degrees fan-forced. Followed all directions, however, used a small ice cream scoop which gave a yield of 48 smaller cookies. Baked for 25 minutes. Left on trays till cold, stored in an airtight container in the fridge. Froze half - reconstitutes well.

    Delicious!! I used 5 smallish Fuji’s, plain SRF, and nuttelex as subs, just what I had on hand and to make it DF. Delicious. Not sure if I want to let the kids try them, I want them all !!

    I forgot to take the apple out at step 1 and mixed everything together instead...i was worried they wouldn't turn out. They are nice but i might have to try them again and do properly next time

    Loved these! Great way to use up the apples that never end up getting eaten.  I had small apples so added four and made them smaller so ended up with 30, only needing 25 minutes of cooking  tmrc_emoticons.)
