Ingredients
- 2 medium bananas, (10 slices then mash remaining)
- 150 gram caster sugar
- 1 egg
- 60 gram Butter, (at room temperature)
- 60 gram Milk
- 100 gram plain flour
- 1 1/2 tsp baking powder
- 1/4 tsp bicarbonate soda

Preheat oven to 180 degrees and line a muffin tray with paper cases.
Slice 10 pieces of banana and set aside. Mash remaining banana with a fork.
Place mashed banana, sugar and egg in TM Bowl. "Closed lid" Mix for 5seconds/speed 3.
Add butter "Closed lid" Mix for 10seconds/speed 3 to combine. Add butterfly and mix for 30seconds/speed 3 until smooth and creamy (this is optional but I find it gives a smoother result).
Add milk "Closed lid" and mix for 5seconds/speed 3 to combine.
Add flour, baking powder and bicarbonate soda. Mix to combine only on gentle stir "Gentle stir setting" . Do not overbeat.
Half fill the paper cases and place a slice of banana on top of each cupcake. Cook for 20-25 minutes or until they springback. Cool in tin.
Tip
If using larger bananas you may need to adjust milk amount to avoid a 'wet' mixture.
Store in an airtight container.

Wonderful, quick recipe! Made these in mini loaf pans, and they look so cute!!! Batter tastes delicious. I did cut sugar back to 100g as I had super sweet bananas. Thanks for sharing!
