Ingredients

  • 125 grams Butter, (softened)
  • 175 grams brown sugar
  • 2 eggs
  • 225 grams plain flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 4 medium bananas, (approx. 1 1/2 cups, mashed)
  • 125 grams raspberries

Recipe's preparation

  1. Preheat oven to 160 degrees. Line a 20cm x 9cm loaf tin with non-stick paper and grease.

  2. Place butter into TM bowl Closed lid"Closed lid"  and chop for 5secs/speed 8.

  3. Insert butterfly, add brown sugar Closed lid"Closed lid" Whip for 2mins/speed 3-4 until pale and creamy. Scrap down sides.

  4. Add eggs Closed lid"Closed lid"  Mix well for approx 10sec/speed 3-4. Remove butterfly.

  5. Add flour, vanilla, baking powder and bicarbonate of soda Closed lid"Closed lid" Mix approx 10secs/speed 3-4. Don't overbeat!

  6. Add mashed banana and raspberries Closed lid"Closed lid" Mix for 10-secs until combined/speed 3-4. Don't overbeat!

  7. Bake for 1 hour and 10 mins or until skewer comes out clean. Allow to cool in tin before turning out.

Tip

Adapted from recipe from Donna Hay! Fresh or frozen raspberries can be used.

    Great recipe. I too cut the sugar down to 100g. I used 2 Large ripe bananas and it was perfect.

    I made this today, lovely flavour but i was guilty of not measuring the banana into the cup and it took about 1hr 40mins to cook so my 4 medium bananas may have been a lot bigger than the medium ones others have used tmrc_emoticons.~

    Amazing tmrc_emoticons.)I cut down the sugar to 100g and added choc chips to it, put blueberries instead of raspberries through the cake and topped it with raspberries!! YUMMY!!! thank you for this recipe tmrc_emoticons.)
