Ingredients

Banana, Pecan & White Choc Muffins

  • 500 grams SR flour
  • 250 grams raw sugar
  • 2 level tablespoons custard powder
  • 150 grams White Choc Bits, Nestle is best
  • 50 grams pecans
  • 180 grams canola oil
  • 180 grams Milk
  • 2 eggs, lge
  • 1 level teaspoon Vailla Bean Paste
  • 2-3 ripe bananas

Recipe's preparation

    Banana, Pecan & White Choc Muffins
  1. 1. Place all wet ingredients into Thermomix bowl, mix for 10 seconds, speed 4 to blend.

    2. Add all dry ingredients. Mix for 10-15 seconds, speed 3-4, reverse until just mixed. Do not mix for extended time as may affect results. OK to have flour still unmixed in bowl.

    3. Distribute evenly into 12 muffin cases. Bake for 20-25 mins @ 180 degrees (fan forced).

    Just made these for a second time - Yum!

    I'm wondering what the custard powder does, as soon I will have used up my packet & won't need to buy anymore since we've become addicted to Thermomix custard. Any thoughts? Does it only add sweetness- perhaps I could replace it with a bit more sugar? (I already halve the sugar as the white choc is so sweet)

    Hope to to hear from someone.

    Glad you enjoyed them! I generally make them with white chocolate bits and 3/4 cup of FROZEN raspberries. These are just amazing too! Prize winning recipe I entered at a local Agricultural Show.......Enjoy!

    These muffins were incredible. I omitted the nuts and replaced the weight of the nuts with additional white chic chips.  The recipe makes 2 dozen. Will definitely make again .
