Ingredients

Banana Weet-bix muffins

  • 3 --- Bananas, ripe, chopped roughly
  • 200 grams Milk
  • 4 Weet-Bix, broken in half
  • 2 Eggs, Large
  • 80 grams Butter, chopped roughly
  • 250 grams Self Raising Flour
  • 30 grams brown sugar
  • 100 grams milk choc bits

Recipe's preparation

    To make muffins
  1. 1.  Line a 12 hole muffin tray with muffin cases and preheat oven to 180C.


    2.  Add bananas, milk and weetbix to bowl. Mix for 10 seconds on Speed 5.

     

    3.  Add eggs, butter, flour and sugar.  Mix for 10 seconds on Speed 5. If necessary, scrape down sides and mix for a further 5 seconds on Speed 5.

     

    4.  Add choc chips and mix for 10 seconds Counter-clockwise operation"Counter-clockwise operation" on Speed 5 or until combined.

     

    5. Spoon mixture into muffin cases and place in oven for 20-25 mins until golden and skewar comes out clean.

    These are great! I only had two very ripe bananas on hand. All other ingredients as stated in recipe. Yummy! Approved by husband and daughter.

    These are a real lunchbox winner - delicious! I substituted 125g honey for the brown sugar and choc chips, and folded some berries through at the end. A great staple recipe to keep for my kids - thank you!

    Fantastic Muffins!!


    They were very easy to make and the kids loved them - thanks for the recipe! I didn't have any chocolate chips so added a bit of honey in the last step - turned out great.
