Ingredients

Banana and Strawberry Muffins / Cupcakes / Loaf

  • 85 g Butter, Cubed, room temp
  • 2 piece eggs
  • 120 g buttermilk
  • 150-180 g overripe bananas, 1 large/2 Small
  • 5 g vanilla
  • 50 g raw sugar
  • 180 g SR flour, White or Wholemeal
  • 150 g strawberries, Cut into approx 1cm pieces

Recipe's preparation

    Method
  1. 1. Preheat oven to 180c. Grease/line cupcake/muffin/loaf tray.
    2. Melt Butter 3mins/50c/Sp2.
    3. Add Eggs, buttermilk, banana and vanilla. Mix 10secs/Sp4.
    4. Scrape down the sides of the bowl. Add sugar and flour. 10secs/Sp3.
    5. Scrape down the sides of the bowl. Mix for another 10secs/Sp3.
    6. Scrape down the sides of the bowl. Add Strawberries. 15secs/Counter-clockwise operation"Counter-clockwise operation" Sp2.
    7. Pour/Spoon batter into prepared trays. Bake at 180c for
    *Cupcakes - 15mins
    *Muffins - 25min
    *Loaf - 60mins
    Times will vary depending on your oven. Batter is cooked when a skewer inserted into mixture comes out clean.
    Cool for 5mins before placing onto a cooling rack to cool completely before storing.

    Store in an airtight container for 2-4 days. These freeze and defrost really well, freeze in airtight container or ziplock bag for up to 3 months.

Tip

Can swap out buttermilk for other milk varieties.

Can swap out strawberries for other berries such as Blueberries, Raspberries etc.

Can swap out strawberries for chocolate chips.

Can reduce/leave out sugar as majority of sweetness comes from the fruit itself.
