Ingredients

  • 75 g icing sugar
  • 150 g Butter
  • 1 tsp vanilla bean paste/extract

Recipe's preparation

  1. Place all the basic dough ingredients into mixing bowl and mix 10 sec/speed 8.

  2. Add optional ingredients and mix 5 sec/speed 5. See tips for ideas.

  3. Roll dough into a sausage shape using a piece of baking paper and place in the freezer for at least 30 min. If you are freezing your dough for longer, wrap in clingwrap and make sure to defrost the dough before baking. Please see notes.

  4. Preheat oven to 150℃. 

  5. Cut the dough in 1cm slices and place on an oven tray with baking paper.

  6. Bake for 22-25 min until done.

Tip

Variations for optional ingredients:

1. Mocha - add 15ml instant coffee and 80g milk chocolate chips.

2. Cranberry pistachio - add 40g dried cranberries and 40g pistachios.

3. Butter Pecan - add 80g pecan nuts.

4. Blueberry White Chocolate - 40g blueberries and 40g white chocolate chips.

Dip half the cookie in melted chocolate for something special.

Dough can be frozen for up to 3 months.

Make 3-4 batches and and store in the freezer so you always have a variety of cookies ready to go.

For a large batch of cookies use 250g flour, 125g cornflour, 125g icing sugar and 250g butter.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
