This is my first try at a fruitcake and I loved it. I did however make a few changes. Firstly there is no need to turn on the oven as a first instruction ....it takes quite a while to cool down the boiled mixture. In fact I poured it into a large SS bowl. I used 350 g mixed fruit and extra 50 g of glace cherries, and after I boiled the fruit and the mixture had cooled down, I added 100 g of chopped walnuts. I only used 60 g of brown sugar and if I had added any more sugar, it would've been far too sweet for me. It is a cake beautifully laden with sweet dried fruit , so certainly cut down the sugar. I cooked it for 1 hr at 150 C and then 1 hr on 120 C ( mainly because I didn't realise the first part was 1 1/2 hours, but in the end, I think it was a good thing because it didn't burn on top) used 21 cm² pan and it was perfect. Thank you so much for the recipe. It is like all the others however the first part was easy to do in the Thermomix.
This is the best fruit cake recipe. I have made it time and time again for some years. I also make it as gifts for people and always get raving reviews and thanks. I add a packet of glacie cherries and about 100gm of walnuts or other nuts that I have on hand. The more fruit the better.
I have used an old family recipe for boiled pineapple fruit cake for many years as a Christmas cake. I found this TM recipe to be just as delicious. Thank you.
Thanks you so much for converting this old school recipe, no more saucepan, boil etc. I have always cooked in 20 cm tin lined with cardboard on the inside to slow the cooking, and only cook conventional bake (no fan) 150 Degrees, ice with brandy butter from the thermo recipe community for an awesome Christmas Cake.👌
Just like Nans old fashioned recipe.
I used a 24cm square tin and reduced time as it was a fairly thin cake in this size tin. I’d suggest 20-22cm would be ideal. I’d also recommend slightly lower temps for a fan forced oven.
What size tin should you use for this recipe?
Has anyone tried soaking the mixed fruit in alcohol overnight, or will it make the mixture to wet?
Lovely moist, flavoursome fruit cake. Simple to make.
Beautiful cake! No mess, easy and delicious!
