Base
- 210 g plain flour
- 100 g brown sugar
- 130 g Butter, cut into cubes
Topping
- 30 g Butter, diced and softened
- 30 g brown sugar
- 25 g golden syrup
- 35 g self-raising flour
- 45 g brandy
- 90 g dried apricots
- 90 g cranberries, dried
- 90 g sultanas
- 90 g slivered almonds

Place all base ingredients in TM bowl. Process for 10 seconds on Speed 5.
Press firmly into greased slice tray (28cm x 18cm). No need to clean out TM bowl.
Place the apricots in TM bowl. Chop for 3 seconds on Speed 5. Set aside.
Place the topping mixtures-butter,brown sugar, golden syrup, flour and brandy in TM bowl and mix for 15 seconds on Speed 6.
Add all the dried fruits and nuts and mix on Speed 3 with "Counter-clockwise operation" for 3 seconds.
Place topping mixture over base mixture and spread evenly.
Bake in moderate oven at 170C -180C for 30 minutes.
Cool in tin and when cold cut into slices

Tip
Looks nice with icing sugar dusted over the top.
