Ingredients

Batter

  • 90 g sorghum flour
  • 40 g brown rice flour
  • 70 g Glutinous White Rice Flour
  • 100 g Potato Starch (not flour)
  • 1/2 teaspoon Guar Gum
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon baking powder
  • 2 teaspoon Bi-carb soda
  • 30 g Carob Powder
  • 60 g raw sugar
  • 60 g brown sugar
  • 140 g light olive oil
  • 260 g coconut milk
  • 1 teaspoon apple cider vinegar
  • Orgran No Egg Replacer, 2 egg equivalant
  • 420 g ripe bananas, approx. 4 bananas

Recipe's preparation

  1. 1. Pre-heat oven to 180 degrees celcius.


    2. Place patty pans in muffin tins, approx. 24. Lightly grease inside of patty pans with oil and brush to prevent sticking.


    3. Place all ingredients into bowl (in order listed) and mix on speed 5-6 for 20 seconds, scrape down sides and base of bowl and mix for a further 10 seconds on speed 5-6.


    4. Pour into patty pans, place into the oven and bake for 10-15mins.

Tip

Be creative! They are delicious cupcakes that have a texture so similar to their glutinous, eggy, dairy friends. They are great with extra bits inside like raspberries and chocolate chips if you can have them!
 They are also great frozen/defrosted.
