- 220g selfraising flour
- 1tsp baking powder
- 1 1/2tsp cinnamon
- 1/4tsp Nutmeg
- 1/2tsp ginger ground
- 3 eggs
- 220g Soft brown sugar
- 1/2 orange zest and juice
- 100g walnuts
- 150g unsalted butter (softened)
- 250g grated carrots, grate in thermomix speed5/2-3secs or by hand
cream cheese frosting
- 100g cream cheese
- 50g Butter
- 150-200g icing sugar
- 1/2 zest of orange and juice

add butter and sugar mix 3sec/speed4 scrape down
add eggs spices/zest and juice mix 3secs /speed4 scrape down
add flour/baking powder/ carrots/walnuts and mix on speed 3/3-5 secs/ rev
i baked in two sandwich tins and cooked for 30-40mins on 190
ICING
put everything in jug and mix 20-30 secs/speed4
allow cake to cool well before icing

original recipe used sunflower oil i prefer butter
