Ingredients

Low carb cheesecake

  • 50g hazelnuts
  • 50g macadamia nuts
  • 100g almond meal
  • 80g Butter, Chopped

Filling

  • 500g cream cheese
  • 200g thickened cream
  • 60g xylitol, Or your choice sweener To taste
  • 3 eggs
  • 1tsp vanilla
  • 20g lemon juice, Or to taste

Recipe's preparation

    Base
  1. heat oven 180
    Chop nuts 3 seconds speed 5 leave a little texture add chopped butter and mix speed 4 till it forms dough press into a lined base of 20cm tin
    cook for 10-15mins to slightly brown leave to cool

    FILLING
    place all ingredients into bowl and blend for approximately 1min at speed 5 till combined you may need to scrape down and repeat taste adjust sweetener and lemon

    pour on top of base and cook on 180 for approximately 45mins check picture above will look cracked and slightly wobbly will drop when you cool best leave for several hours to cool before serving

    Serve with berries

Tip

This recipe was inspired by wholesomeyum but a kilo of cream cheese to much in my opinion
you can heat blueberries with a little sweetener but was sweet enough without for me

    What a fantastic recipe! The whole family loved it, so I'm making again today. It did however, take much longer to cook. I think I just kept adding 10 minutes to my timer until a thought it was done. I don't care how long it takes to cook, this recipe is definitely a keeper for me.

    Made this tonight - changed out hazel nuts for Brazil nuts as that's what I had on hand and added a tspn of sweetner to the base mixture. The filling was very delicious with just 60g of sweetner and 20g of lemon juice. Very easy and super tasty recipe and my Low carb girlfriend will be super surprised with her birthday cake 🍰 serving with fresh blueberries and cream. Thanks thermo-envy.
