I'm cooking this today

Recipe's preparation

  1. Pre-heat oven to 180 degrees celsius

2.Melt the butter at 80 degrees for two minutes on speed 2.

    3. Add the sugar, cocoa and vanilla and mix for 10 seconds on speed 4.

    4. Add the eggs and flour and mix for 10 seconds on speed 4.

    5. Add the chocolate pieces and mix on speed soft Gentle stir setting"Gentle stir setting" on reverse Counter-clockwise operation"Counter-clockwise operation"  for 20 seconds.

    6. Pour mixture into small lamington tin (26 x 18cm approx) I line mine with baking paper for easy removal.

    7. Bake in 180 degree oven for 30-40 minutes.

    8. Cool, slice and serve with sifted icing sugar over the top.

  2. It is easy to burn this because of the high sugar content. My oven is quite cold and my lamington tin is quite thin so  I put the tin on top of two baking trays to increase the thickness and reduce the chance of burning. This has enabled me to bake for the 40 minutes and for the brownies to "set". You may prefer to bake for less time or bake at a lower temperature

Very nice. Not "chewy" though.  More cakey texture. Used half white, half dark chocolate. Only added 200g sugar and was certainly sweet enough. Cooked at 165 deg for 30 minutes. Didn't burn but was well cooked.

Have made this easy recipe several times. I use a block of Cadbury Chocolate 200g in mine. A big hit, time and time again.

Thanks for letting me know. We have a bit of a cold oven so I will change it to 30-40 mins.
