- 170 grams oats
- 100 grams walnuts
- 40 grams Shredded coconut, Or desiccated
- 45 grams chia seeds
- 1 teaspoon ground cinnamon
- 1 tablespoon cocoa
- 2 teaspoons vanilla extract
- 430 grams pitted dates
- 50 grams coconut oil

I'm cooking this todayRecipe's preparation
Add coconut oil to bowl, 80 degrees for 1 minute
add all other ingredients except dates and blitz on speed 6 for 20 seconds
add dates and blitz on speed 8 for another 20 seconds
pour mix into a slice tin and press down with your hand and the back of a spoon
place in fridge for a couple of hours to set
cut into slices and serve dusted with icing sugar
Tip
You can use a mix of fruit. I've used a combo of dates, prunes, dried apricots and raisins before. The coconut oil helps to set it. You can play with this amount as it'll depend on the type of fruit you use.

Really nice good snack for the kids, used 60g coconut and a mix of rasions and dates

My 3yr old just had a piece of this and immediately said "Mum I'm still hungry!" So it's a bit hit for us! I had to use a bit more coconut oil as well as it was a bit crumbly but once I'd pressed it in the tin and put it in the freezer for an hour it was perfect. Really fudged type texture and yum - will definitely be making often for snack time. (I used Cacao instead of Cocoa).
We also love this slice. My husband makes it in a jiffy. However we also had to add more coconut oil. This needs to be refrigerated or it goes too soft and falls apart.
A very healthy snack that's very quick and easy to make. I used only 400g dried fruits but still found it a bit too sweet for my taste so I will experiment with slightly less fruits next time. I used 55g coconut oil and didn't find the slice crumbly at all. Very yummy. This will now be a regular snack in our house from now on.
I found this a little crumbly, so we increased the coconut oil to 75g and it is much easier to eat! You could also increase the dates if desired.

This isn't actually gluten free, unless you specify gluten free oats...which are hard to come by!
Maybe Quinoa Flakes or Buckwheat Flakes might work instead?
