Ingredients

12 large and 12 mini muffins

  • 240 grams coconut oil
  • 4 eggs
  • 200 grams Milk, of your choice
  • 2 teaspoons vanilla extract
  • 200 grams rapadura or panella
  • 240 grams self-raising flour
  • 50 grams raw cacao powder (organic)
  • 2 teaspoons baking powder

Recipe's preparation

    Method
  1. 1. Pre-heat oven to 180 deg celcius. 

    2. Line a large muffin pan and a mini muffin pan. 

    3. Add all ingredients into TM bowl and mix for 30 seconds on speed 5. 

    4. Distribute the mixture into lined muffin trays and bake in the pre-heated oven (large muffins 20-25 mins and mini muffins 12-15 mins depending on your oven) 

    5. Dust with icing sugar or desicated coconut and serve. 

     

    You might like to serve when still warm with ice cream or cream tmrc_emoticons.)

Tip

I use a 1/4 cup to measure out the large muffin mix and a tablespoon per mini muffin.

    Oh, so glad you like them!! I used rapadura as that's what I had on hand tmrc_emoticons.;) Great to hear it worked well with coconut sugar too tmrc_emoticons.)

    Kids love them, I love them. I did use coconut sugar instead of the rapadura as I only had coconut sugar. Worked just as well. THank you for sharing.
