Ingredients

Base

  • 120 g Salted butter
  • 120 g self-raising flour
  • 120 g brown sugar
  • 80 g Desiccated Coconut

Caramel

  • 1 cans sweetened condensed milk, or 395g home made condensed milk
  • 30 g Salted butter
  • 50 g golden syrup

Topping

  • 350 g Cadbury Milk Chocolate, 1 large block, broken into squares

Recipe's preparation

    Base
  1. Preheat oven to 180°C. Grease and line a baking tray (30cm x 20cm) with baking paper.
    Melt butter 3min/50°C/sp1, or until melted.
    Add SR flour, brown sugar and desiccated coconut. Mix 10sec/sp4.
    Scrape down mixing bowl with spatula and mix 10sec/sp4.
    Press down into prepared tray and bake 12min.
    Clean and dry mixing bowl.
  2. Filling
  3. Place condensed milk, butter and golden syrup into bowl.
    Cook 20min/100°C/sp3, using simmering basket instead of measuring cup.
    Pour over base and bake for a further 12mins.
    Cool completely before topping with chocolate. Thoroughly clean and dry mixing bowl
  4. Topping
  5. In a clean and completely dry mixing bowl, add chocolate.
    Grate 5sec/sp8. Scrape down mixing bowl with spatula.
    Melt 3min/50°C/sp2, or until melted.
    Spread over cooled caramel and set aside. When partially set, score lines for slices, and then refrigerate until topping is completely set, around 1 hour.

Tip

These keep for a week in an airtight container in the fridge. I prefer to use salted butter, but unsalted is fine.

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
