Recipe's preparation

  1. 1. Place water, butter, salt adn sugar into miing bowl and cook 2 mins 30sec - 5 mins/100C/speed 1

    2. Add flour and mix 20 sec/speed 4. Remove mixing bowl and set aside to cool for 10 mins

    3. Preheat oven to 200C. Line a baking tray with baking paper and set aside

    4. Place mixing bowl back to into position and mix speed 5, adding eggs one at a time thorugh hole in mixing bowl lid onto rotating blades.  After adding the last egg, mix a further 30 sec/speed 5.

    5. Place pastry mixture into an icing bag and pipe balls (puffs) or sticks (eclairs) onto prepared baking tray, leaving 5 cm space between each.  Bake for 20 - 25 mins or until golden brown.   Turn off oven, remove tray, then pierce each ball with a wooden skewer to release steam.  Return tray to oven and open oven door, leaving it ajar for 10 minutes to allow pastry to dry.  Remove tray from oven and allow choux pastries to cool completely before filling as desired.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     First time I have used this recipe. It was seriously wet and I had to add a lot more flour.  The only thing I did was use large eggs (which I always do). Has anyone had this problem?
