Dough

  • 490 g plain flour
  • 55 g caster sugar
  • 3 level teaspoons dried yeast
  • 1 pinches salt
  • 250 g Milk
  • 100 g Butter
  • 3 --- egg yolks
  • --- canola oil, to deep-fry
  • 215 g caster sugar, Extra
  • 2 level teaspoons ground cinnamon

Recipe's preparation

    Method
  1. 1. Add milk and butter to thermomix bowl heat for 2 minutes, 40 degrees speed 2.

    2. Speed 4 for 5 seconds and add egg yolks through the measuring cup hole.

    3. Add Yeast, sugar, flour and salt mix 10 seconds speed 6 to combine.

    4. Knead 3 minutes using the dough function Dough mode"Dough mode" .

    5. The dough will be sticky, knead on a well floured surface until smooth.

    6. Place in greased bowl, cover. Prove for 1 1/2 hours or until dough has doubled.

    7. Punch down dough. Knead on a lightly floured surface for 2 minutes or until smooth.

    8. Cut in half and roll into logs. Cut into pieces and roll into balls. Flatten balls a little and cut a hole in the centre.

    9. Set aside to rise for 15 minutes, combine extra sugar and cinnamon on a tray.

    10. Heat oil to 180 c, deep fry 4-5 doughnuts for 40 seconds each side or until puffed and golden.

    11. Transfer doughnuts to the sugar mixture and turn to coat.

Tip

Don't throw out the centres re-roll them and make more doughnuts or make doughnut holes.
Make vanilla sugar by combining caster sugar and split vanilla beans in a jar. Infuse for a few weeks and then use it to coat your doughnuts.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
