Ingredients
- 65 grams Almonds raw
- 90 grams caster sugar
- 2 pieces lemon rind, 2 x 5cm without pith
- 2 pieces lime rind, 2 x 5cm without pith
- 2 pieces Orange rind, 2 x 5cm without pith
- 150 grams Butter, softened, chopped
- 140 grams plain flour, plus more for dusting
- 20 grams potato starch, can substitute cornflour
- 1 teaspoon Vanilla Bean Paste
- 60 grams icing sugar
- 2 teaspoons blood orange juice
- plain flour

Pre heat oven to 180°C or 160°C fan forced.D
Mill almonds 10 secs on speed 7 to make nut meal, tip out to mixing bowl
Place caster sugar and rinds in TM bowl, mill 10 secs on speed 9. Scrape down sides of bowl, mill further 3 secs speed 9 if pieces rind visible.
Add chopped butter, flours and vanilla paste and mix 10 secs speed six then knead (interval speed) "Dough mode" 20secs. Stop once comes together, tip out onto floured surface and press together until forms smooth ball.
Cut in half and roll out to long sausage approx. 3cm in diameter, cut into 1.5 cm round and place on tray lined with baking paper. Leave enough room to spread, press lightly with fingers to flatten.
Bake 25 mins or until golden. Cool on tray for 5 mins until firm then move to cooling rack. Enjoy plain or iced with a little citrus juice and icing sugar.
