Ingredients

  • 125 grams Butter
  • 60 grams brown sugar
  • 1 tbsp vanilla
  • 2 eggs
  • 75 grams Coconut Flour
  • 25 grams gf self-raising flour
  • 100 grams choc-chips (any variety of white/ dark/ milk)
  • 25 grams macadamia pieces
  • 35 grams milk (rice, almond or cow if you prefer)

Recipe's preparation

    Instructions
  1. Place butter into TM bowl and process 20 seconds on speed 5.

    Add in sugar and vanilla and process for 10 seconds on speed 4.Add in eggs and process 20 seconds speed 4.Add in flours and process 40 seconds speed 4.Now add in choc chips and nuts and mix 20 secs speed 4. Check mixture. Add 15mls rice milk. Mix 10 secs speed 4.

    If looks too dry add remaining 10g milk, mix 10 sec speed 4. Otherwise put onto baking paper on tray for 13-15 mins, on 170 degrees celsius.

    Let them cool on tray for 5 minutes, then move onto a wire rack for cooling. I like them warm with a cup of tea, but once cooled store in an air tight container. Will keep for 4 -5 days (if they last that long!)

Tip

**Mixture can be doubled for greater amounts of cookies!

    Love them! I did not have macadamia so put choc chips only and instead of self raising flour I put coconut flour only.. turned up amazing!!!!!

    These are delicious! It's the first time I've had success when using coconut flour. I made them vegan by substituting the egg with chia seeds (2 T with 6 T water and soaked for 10 mins) and the sugar with rice malt syrup (40 grams) to make it sugar free. I also didn't include the choc chips or nuts. Fantastic! Thanks for sharing.

    Love these low sugar treats. I took out the Macademia nuts and added some dedicated coconut to make them nut free for school. Total hit!
