Recipe's preparation

  1. Add butter in TM bowl and melt 3min/100degC/speed 1.

    Add caster sugar, orange juice, Cointreau and eggs and mix for 10secs/speed 3.

    Add flour and knead for 3min/knead.

    The dough should be smooth.  If not, knead again for as long as necessary.

    Remove dough from the bowl, form a ball, wrap in plastic and allow to rest in fridge for 30 mins.

    Cut dough into 4 pieces.  Using a pasta machine, process one of the quarters through the widest setting until smooth and pliable.  Pass through the machine settings until 2mm wide (about setting 5 or 6).

    If you don't have a pasta machine, roll the dough thinly with a rolling pin.

    Cut dough into 4cm strips.  Cut a slit through the centre of each piece and pass one end through the centre to create the crostoli shape. 

    Repeat with each piece of dough.

    Heat oil in deep frying pan or saucepan to about 170degC.  Shake off excess flour before frying or else the flour will burn and spoil the oil.  Fry 4-5 pieces at a time until golden, and using two forks to turn.

    Drain on a rack and dust with icing sugar.

    Delicious with coffee!

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Made half recipe, turned out great using my TM31. I used Cointreau & extra lemon juice only. 😋

    I made these today and used 300g of plain flour and 200g SR flour instead of 500g plain flour, also i used grappa instead of cointreau and used 30mls of lemon juice and added lemon rind to the mixture instead of orange juice but you could use orange rind aswell, they turned out great and tasted just like the way my nonna and zia's make them!.. the dough was great to work with! i give it 5 stars also i only used my Thermomix for the first time today and this is what i made, so it was easy!
