Ingredients

DRIED APRICOT SLICE

  • 250 grams Butter
  • 390 grams sugar, can be castor sugar
  • 4 eggs
  • 300 grams plain flour
  • 245 grams Milk
  • 225 grams dried apricots
  • 150 grams desicated coconut
  • 2 teaspoons vanilla
  • 2 tablespoons golden syrup, optional

ICING

  • 360 grams icing sugar
  • 40 grams Butter, room temperature
  • 3 drop Food colouring, optional
  • 2 tablespoons hot water

Recipe's preparation

  1. SLICE

    Place dried apricots into Closed lid"Closed lid" . Add lid and chop for 5 seconds / speed 7. Repeat if necessary.

    Soak apricots in milk for 1/2 hour

    Cream butter and sugar. Mix 30 seconds / speed 4, scrape Closed lid"Closed lid" , mix for 20 seconds / speed 6, scrape Closed lid"Closed lid" and mix another 20 seconds / speed 6.

    Add eggs, vanilla, flour, golden syrip and coconut

    Beat well - 60 seconds / speed 5.5, scrape Closed lid"Closed lid" and mix for another 20 seconds / speed 5.5

    Add apricots and milk. Mix for 60 seconds / Counter-clockwise operation"Counter-clockwise operation" speed 4

    Bake in slab tin. (33 x 24cm) at 160 degrees (fan forced). Bake for 25 minutes, turn tin around and bake another 10 minutes.

    Ice then sprinkle with coconut
  2. ICING

    In Closed lid"Closed lid" place first 3 ingredients and mix for 6 seconds / speed 6. Add hot water and mix for 5 seconds / speed 7.

Tip

The ingredients can be halved and baked in a normal slice tin.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
