Dede’s Gingernut Truffles
- 1 package Gingernut biscuits
- 125 g cream cheese
- 60 g icing sugar
- 50 g dessicated coconut
- 200 g chocolate melt, (of your choice)

- 1. Add packet of gingernut biscuits to mixing bowl
2. Mill for 10 seconds at speed 7
3. Add 125g cream cheese, 60g icing sugar, 50g desiccated coconut and combine for 10 seconds at reverse speed 4
4. Roll into balls to your liking and freeze for at least 2 hours or overnight
5. Clean and thoroughly dry mixing bowl
6. Add 200g chocolate melts and grate for 10 secs at speed 9
7. Scrape down sides of the bowl and melt for 2-3 mins 50degrees at speed 2
8. Half dip truffles in chocolate and refrigerate to set
9. Store in the refrigerator
Tip
- You can double this recipe which uses a whole container of cream cheese (250g) and a double packet of gingernuts - Dip in preferred chocolate of your choice
