Ingredients
Easy Chai Spice Cupcakes
- 130 g Milk
- 4 teaspoon Chai powder, ( or 2 chai tea bags)
- 130 g Butter
- 100 g caster sugar
- 2 eggs
- 260 g SR flour
- 1/2 teaspoon cinnamon
Chai Buttercream Icing
- 2 teaspoon Chai powder
- 120 g Butter
- 300 g icing sugar
- 30 g Milk

Preheat oven to 160 degrees.
Heat milk for 2 mins 60 degrees speed 1,pour into a jug add Chai powder, stir to dissolve, set aside. ( if using tea bags, add to milk and let steep for 5 mins)
Add butter and sugar to bowl and beat on speed 4, 1 min. Scrape down bowl if needed.
Add eggs one at a time through lid whilst beating on speed 4. Beating well after each addition.
In a seperate bowl mix together flour and cinnamon. Turn TM to speed 2 and alternately add flour mixture and the milk mixture through the lid, begining and ending with flour, mix until combined. Scrape sides of bowl if needed and mix for a further 5 secs.
Spoon into muffin cases and cook for 20- 25 mins.
Add butter, chai powder and icing sugar and beat for 15 sec "Counter-clockwise operation" speed 2.
Add milk and continue mixing for 4 mins, scrape sides of the bowl if needed.

These turned out well texturally although I did add 1/4 tsp of ground ginger, a pinch of ground cradamom and a bit extra cinnamon. I'd suggest that if youre using teabags, that the brew is strong -ie using 3 teabags perhaps - as the finished result was still subtle despite the extra spices I added.
