Ingredients
Cake
- 250 grams smooth ricotta cheese
- 100 grams sugar raw
- 60 grams light extra virgin olive oil
- 2 eggs
- 200 grams almond meal
- 1.5 teaspoons Baking Powder, gluten free
- 125 grams fresh blueberries
- flaked almonds, optional
- lemon zest, grated, optional

- 1 - Preheat oven to 170 degrees (fan-forced).
2 - Line a 20cm round springform pan.
3 - Place 250g ricotta, 100g sugar, 60g light extra virgin olive oil and 2 eggs into the mixing bowl (add lemon zest if using) and mix on Speed 5 for 10 Seconds.
4 - Add 200g almond meal and 1.5 tsp baking powder into the mixing bowl and mix on Speed 4 for 10 Seconds.
5 - Add 1 punnet (125g) fresh blueberries into mixing bowl and mix on REVERSE "Counter-clockwise operation" on Speed 4 for 5 Seconds.
6 - Pour cake mixture into pan and sprinkle the top with flaked almonds (optional).
7 - Bake until cake is golden brown, approx 40 minutes. Leave cake to cool in the pan.
Tip
If using frozen blueberries allow addition cooking time.
Could mill your raw sugar into caster sugar prior to starting receipe, however i found it turned out fine just using raw sugar.
Could mill blanched almonds into almond meal in your Thermomix before starting recipe also.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
