- 100 g Butter, cut into cubes
- 100 g honey
- 40 g brown sugar
- 200 g rolled oats
- 60 g pitted dates
- 50 g dried apricots
- 40 g currants
- 50 g dried cranberries
- 30 g Dried apple
- 30 g chia seeds
- 30 g pepitas
- 30 g sunflower seeds
- pinch of ground cinnamon
- pinch salt flakes

Preheat oven to 140 degrees/Gas Mark 2.
Place the butter, honey and brown sugar in the TM bowl and melt for 6 minutes/Varoma/speed 2 to form a light, sticky caramel.
Add the dates, apricots and apple - chop for 4 seconds/speed 5.
Add the rolled oats, cranberries, currants, white chia seeds, pepitas, sunflower seeds, cinnamon and salt flakes. Mix for 20 seconds/"Counter-clockwise operation" speed 2.
Line a baking tray of about 20cm x 30cm with baking paper. Pour mixture in and use a large sheet of cling wrap to press down evenly and smooth it out.
Bake for 20-25 minutes or until golden brown. Cut donw the centre lengthwise and into bars. It will make around 22-24 bars, depending on how narrow you cut them. Store in an airtight container. If you store in the fridge, they will be crunchier.
Tip
These muesli bars are incredibly adaptable and excellent for kids' lunchboxes, as they have no nuts! You can use other seeds or fruit - just play around and have fun!
They’re extra delicious because the sugar, honey and butter are slightly caramelised.
* You can omit the sugar entirely and they will still be sweet!

Really easy, and adaptable. I also didnt add the sugar and its plenty sweet enough. I also drizzled dark chocolate over the top once cooled.
Great recipe, especially for kids lunch boxes for those that have to provide nut free snacks. Kids love them. I usually add a light sprinkle of melted dark choc on top which adds an extra little something.

I used golden syrup instead of honey because I didn't have any honey. I didn't add the extra sugar. I personally don't like things too sweet. I also added a few cashews and macadamia nuts, and I also added a lot more salt. I like the sweet and salty thing and these worked perfectly for that.
