Ingredients

Fudge Base

  • 200 g pecans
  • 100 g medjool dates, pitted
  • 1 tsp vanilla
  • 1/2 tsp ground cinnamon
  • 65 g Cacao (Raw)
  • 6 tbsp Maple syrup
  • 20 g Desiccated coco
  • 30 g pecans

Ganache

  • 1/2 avocado
  • 4 tbsp Cacao (Raw)
  • 4 tbsp Maple syrup
  • 1/4 tsp vanilla

Recipe's preparation

    Base
  1. Process pecans 3sec/speed 7 or until almost flour. Don't over process and get nut butter! There will still be tiny nut chunks in it.

  2. Add dates and process 3sec/speed 7.

  3. Add remaining ingredients, except extra pecans broken by hand, and process 20sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4-5 until a sticky, well-combined 'goo' has formed. Taste. The batter shiuld be pretty sticky at this point.

  4. Add extra pecans and process 5sec/Counter-clockwise operation"Counter-clockwise operation" /speed 4-5 or until mixed through.

  5. Press into a shallow tin (silican spoon worked best for this). Pop into freezer for 20mins to set.

  6. Ganache
  7. Add all ingredients into mixing bowl and process 5sec/speed 5.

  8. Insert butterfly and process 10sec/speed 4 or until you have the smoothest ganache you've ever tasted!

  9. Spread the ganache nice and thickly over the brownies and pop back into the fridge for 4 hours or so to set.

Tip

Try to leave some for your guests!
