Ingredients

Cake

  • caster sugar (1 cup)
  • Red grapefruit zest, 3 tbsp
  • eggs whole, 2
  • Red grapefruit juice, 3 tbsp
  • Butter, 1/3 cup
  • plain flour, 1 1/2 cups
  • Himilayan or sea salt, 1 tsp ground
  • baking powder, 1 tsp
  • sour cream, 1/2 cup
  • full cream milk, 2 tbsp

Glaze

  • Icing sugar mixture, 1 cup
  • sour cream, 1 tbsp
  • Red grapefruit juice, 1 tbsp
  • Milk, 1 tbsp (or until mixture is thin)

Recipe's preparation

    Cake
  1. Preheat oven to 180 degrees and line or grease a loaf tin. Add caster sugar and zest to the mixing bowl, mix 30 seconds, speed 3, MC on.

     

  2. Add eggs, juice and butter (room temperature) to the bowl mix for 30 seconds, speed 4, MC on.

     

  3. Add flour, salt, baking powder to the bowl, mix for 10 seconds, speed 4, MC on.

     

  4. Add sour cream and full cream milk to the bowl, mix for 60 seconds, speed 4, MC on.

     

  5. Pour batter into tin. Bake for 40 - 50 minutes or until skewer comes out clean. Allow the cake to cool before removing from the tin.

  8. Add icing sugar, sour cream, juice and milk to the mixing bowl, mix on speed 4 for 30 seconds, add more milk as required to get the desired consistency.

     

    Once the cake has cooled, drizzle the glaze over the cake, allow to set then enjoy!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Very nice tasting cake - the taste of the grapefruit came through perfectly. The cake was a bit fiddly to make mainly because key ingredients were listed with cup measures and it would have been easier to use the Thermomix scale and weigh the main ingredients into the bowl. Thank you for the recipe
