Ingredients
Orange cake
- 310 gram mandarins, with skin left on
- 3 eggs
- 100 grams Caster Sugar (or milled from raw)
- 300 grams almond meal
- 1 teaspoon gluten-free baking powder
- 1 teaspoon Vanilla Bean Paste
- 100 grams Rapdura sugar (or brown)

Preheat oven to 170C. Grease and line a round tin.
Quarter the Mandarins leaving the skin on and put in TM bowl.
Mix on Speed 8 for 10 seconds.
Add all remaining ingredients to and combine 20 seconds, speed 4.
Pour into cake tin and bake in oven for 45 minutes or until a skewer inserted into the centre comes out clean.

Great cake. Very moist. Was really popular at the staff morning tea. I iced with some cream cheese icing with which I added lemon juice.
Great to use up a heap of mandarins (I used about 5 small ones), however I personally prefer the orange version
Loved this cake - came out very very moist (most of my cakes come out dry and i cannot get them correct). Everyone enjoyed this one. I also made cream cheese icing on top with lemon which went well but next time i would only use 1/2 the sugar, as i found the cake to be a little too sweet for me.
This is my favourite recipe that I have made in my Thermomix so far. I made it once and taken it into work to share, and made it again, but this time kept it home, too good to share!!

Really moist and pretty and yum of course! I added a tbs of poppy seeds and used 310g of orange instead of mandarin, i was trying to keep it as close to the 30 sec orange cake as possible, as that one is divine! It was quit crumbly and delicate though... any thoughts as to why?
Beautiful cake. Moist, tasty, and perfect with cream cheese lemon icing. Yum!
