Ingredients
Gluten Free Anzac Biscuits
- 120 grams Butter or dairy free spread, cut into pieces
- 100 grams golden syrup
- 1 tsp bicarbonate of soda
- 100 grams gluten free Weet Bix
- 150 grams Gluten free plain flour
- 70 grams brown sugar
- 50 grams dessicated coconut

- Preheat oven to 160°C. Line two baking trays with baking paper or thermo mats and set aside.
Place Weet Bix in dry thermomix bowl and turbo 2 - 4 seconds. Place aside in small bowl.
Place butter or dairy free spread and golden syrup into mixing bowl and heat 3 min/60°C/speed 2. Scrape down sides of mixing bowl with spatula.
Add bicarbonate of soda and mix 5 sec/speed 3.
Add reserved Weet Bix, plain flour, brown sugar and desiccated coconut and combine 8 sec/"Counter-clockwise operation" /speed 4.
Place 1 tablesppon of mixture onto prepared baking tray and flatten to approx. 4 cm in diameter. Repeat with remaining mixture (makes approx. 30 biscuits). They do not spread much but allow some space for spreading.
Bake for 9-12 minutes (160°C) until golden brown. Remove from oven and allow to cool on trays for 10 minutes until firm, they will be quite soft out of oven. Transfer to a wire rack and allow to cool completely or serve warm.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
