Ingredients

Gluten Free Brownie

  • 175 g raw almonds, skin on
  • 200 g raw sugar
  • 30 g Raw Cacao
  • 125 g callebaut dark chocolate pieces, 60-70%
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 100 grams raspberries, fresh or frozen
  • 250 grams unsalted butter, cut into pieces

Recipe's preparation

    Method
  1. Place almonds in bowl and mill 8 seconds speed 9. Remove from the bowl and reserve. (no need to wash)
    Add sugar to the bowl. Mill for 30 seconds on speed 9. Scape down the sides.
    Add chocolate, cacao and butter. Melt and combine ingredients on reverse speed 1 at 80oC for 4 minutes or until melted and combined. Scrape down the sides.
    Add almond meal, eggs and vanilla extract. Stir for 1 minute on reverse speed 3. Lastly add raspberries and stir reverse speed 2 for 20 seconds.
    Pour into a silicon square baking pan 30 cm X 30 cm X 4 cm. Bake in a 180 oC oven, middle shelf, fan forced, for 35 mins. Turn halfway through cooking to ensure even cooking.
    Remove from oven, test with a skewer. It should come out clean. The Brownie should be firm, but soft in the centre. Leave to cool for at least 30 mins.
    Remove from silicon pan, by turning upside down, gently onto a clean chopping board. Cut into four long slices and turn. Cut into 20 pieces. Delicious for afternoon tea or dessert.

Tip

If you don't own a silicon square pan, you could use a ceramic dish or metal baking pan lined with baking paper. Remember chocolate can stick to metal and ceramic, when cooked, using baking paper will reduce this problem

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

    Delicious!! Scrumptious!! A little bit hard to pick up without some coming off, but that could be more down to me as a cook than anything.
