  • 200 grams Butter
  • 120 grams icing sugar
  • 4 eggs
  • 100 grams Gluten Free SR Flour

Recipe's preparation

  1. Preheat oven to 160C and line 12 hole muffin tin with papers
  2. Place chocolate chips and butter into mixing bowl and melt for 3 mins, 50C, speed 1
  3. Scrape down sides of the bowl with spatula. Then melt for 3 mins, 50C, speed 1 until melted (increase time if needed for all the chocolate to be melted). Then transfer to another bowl
  4. Add butterfly to mixing bowl. Then place icing sugar and eggs to the mixing bowl. Whip for 5 mins, speed 4.
  5. Add Gluten free flour to the mixing bowl and reserved chocolate/butter mixture. Combine for 5 sec, speed 4
  6. Scrape down sides then mix for 5 sec, speed 4.
  7. Divide mixture between muffin cases. Place in preheated oven and cook for 25 mins or until a skewer inserted into cupcake comes out clean. Leave for 5 mins then transfer to a wire rack to cool. Serve sprinkled with icing sugar.

Tip

You may like to make your own chocolate buttercream icing to spread on top.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
