Ingredients
- 125 g Butter
- 1/3 cup --- Coconut sugar
- 1/3 cup Coconut Syrup
- 3 teaspoon bicarb soda
- 1 egg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 teaspoon cinnamon
- 3 cups GF plain flour (I used white wings)

1 - pre heat oven to 160/180 depending on how hot your oven is
2 - Line 2 cookie trays with baking paper
3 - Add butter, sugar and syrup to the bowl and cook 5 mins, 60 deg, speed 2
4 - Let the mixture cool to 37 degrees (wait for the lights to go out on the hotter temps)
5 - Add spices, egg and bicarb
6 - Mix 10 seconds speed 4
7 - Add flour and mix 5 seconds speed 2
8 - Knead for 2 mins "Dough mode"
Tip mixture out onto either a floured surface (or as we used, a large chopping board and a long length of baking paper) and roll out to desired thickness. I halved the dogh mix and kept the half wrapped in baking paper to stop it from drying out.
Cut into cookies using fun shapes.
Bake for 8-10 minutes and leave on the tray for about 5 minutes before transferring to a wire rack to cool completely.
Ice/decorate with your favourite 'frosting'. I have intentionally not included an icing recipe as we all have our favourites and icing is pretty easy to make! We made a basic lemon icing, divided it between a number of small ziplock bags, missy coloured them as she saw fit and then got creative...
