Impossible Coconut Pie - Lady Flo Bjelke-Petersen

  • 4 eggs
  • plain flour, 1/2 cup
  • sugar, 1 cup
  • vanilla, 2 teas
  • Butter, 1/2 cup or 115gr
  • Milk, 2 cups
  • Desiccated Coconut, 1 cup

Recipe's preparation

    Directions
  1. Blend all ingredients.
    Pour mixture into a 26cm greased pie plate.
    Bake in a moderate over (180-200C) for 1 hour or until the centre is firm.
    ‼️My oven in 180C always cooks the pie in 30 mins 👍🏻

    The pie will rise up and then sinks as it cools.
    The flour settles to form a crust, the coconut forms a topping and the centre is an egg custard.

    Options - you can use gluten free flour, shredded coconut, coconut milk as alternatives. Even add lime or lemon juice if you want.

    Serve with cream, ice cream or custard.

    Always a family favourite 🤗🤩
