Ingredients
Batter
- 250 grams Butter
- 200 grams sugar
- 250 grams Self Raising Flour
- 3 eggs
- 125 grams Milk
- 1 level tbsp vanilla essence, or add 1tsp vanilla bean paste
Frosting
- EDC cream cheese frosting
- EDC butter cream frosting

Preheat oven to 180 degrees celcius (fan forced)
Add butter and sugar -Cream 10 secs speed 6
Scrape down sides of bowl and repeat
(you may need to do this three-four times)
Mixture should be light and fluffy
Add all other ingredients and mix 30 seconds speed 8
Scrape down sides and mix 1 min speed 8
Mixture should be well combined, smooth and airated. If not, continue mixing for a further 30 secs
I like to add sultanas to the mix but you could add other dried fruit or choc chips
Place mixture into individual patty pans (makes 12-18 depending on size)
Place in oven 20-25 minutes until golden brown!
Whilst cupcakes are baking make the frosting. You can add food colouring or flavours to butter cream and cream cheese frosting (lemon or lime juice, vanilla bean paste, cocoa, melted chocolate, sprinkles etc)
Wait until cupcakes are cool before icing.
Eat and enjoy! See if you can stop at just one
Quick and easy!
Tip
If you are unsure if cupcakes are ready you can place a skewer into one to check. if it comes out clean, it is ready.
I just lightly touch the top of a cupcake and if it springs back I know they are ready!
