Ingredients
Cake Mixture
- 1 lemon, Cut into 4
- 225 grams unsalted butter, Cubed
- 3 eggs
- 200 grams castor sugar
- 300 grams Self Raising Flour
- 15-20 grams baking powder, Optional
Syrup
- 2 Lemons Juices, Optional amount I used 2 because I like lemon.
- 60 grams sugar, If you only use 1 lemon half the amount of sugar

Preheat your oven to 180 degrees *Fan Forced
Grease and line a 20cm round cake tin (I have a spring form one that works well)
Place the lemon and butter into the Mixing bowl - 10 seconds Speed 8
Add the remaining ingredients and mix for 20 seconds on speed 4 "Counter-clockwise operation"
Scrap down with spatula and repeat for 15-20 seconds on speed 4
Pour into baking tin and bake for 45-55 Minutes (I found time varies depending on the oven) when golden brown or clean skewer tested remove from the oven and cool.
Making the Syrup
Add sugar to Mixing Jug with the juice from lemons
Cook for 2 minutes on speed 2 at 100 Degrees
Pour onto cooled cake.
I've also iced this cake with Lemon Buttercream Icing and it's amazing so if your a big fan of Butter Cream Icing go for gold!
This is a super quick and easy cake that I've found everyone loves.

I made this as one of the cakes at my daughters birthday and it was the favourite by kids and adults.
I cut down on the sugar and iced with lemon icing. Was a crumbly cake but once I put in the fridge it wasn't as bad. This was a very tasty cake and nice and quick to make. I will make it again
I substituted the sugar with rice malt syrup in the cake and stevia in syrup, but we could`nt wait until it cooled to add the syrup. The family loved it, smells delicious and is super moist and light. Thank you, great recipe.
Lovely, so light. I added an extra egg to make the batter slightly less thick. Only needed the juice of one lemon for syrup as it was a big lemon! I love the fact you just quarter the lemon and put it in. I did have a lemon with quite a thick pith though and so the cake tastes slightly pithy.
Being new to TM and working with a TM31, I found this recipe very simple to follow. The result was a very tasty cake. I can't wait to try the orange version 😊 Thank you.
I have since tried replacing the sugar with stevia and found it to be just as tasty 😊
Made this cake as per the recipe twice now and cooked in a ring pan and a loaf tin.. both times have been perfect.. made the lemon syrup to put over the loaf today and it was a hit..

Thanks, I made this cake tonight and it turned out perfectly. Everyone in my family loved it. I added 10g of baking powder and drizzled with the glacé icing (1 lemon and 30g icing sugar, as mentioned). I used a bundt tin and reduced baking time to 35min. I'll be making it again
