Lemon Tea Cake
- 150 grams self-raising flour
- 110 grams castor sugar
- 60 grams Butter, chopped in small pieces
- 1 egg, lightly beaten
- Lemon Butter, as per Everyday Cookbook

Prepare Lemon Butter as per Everyday Cookbook. Place in Thermoserver to keep hot.
Preheat oven to moderate - 180C.
Grease an 18cm spring form tin,line the base with baking paper.
Mix flour and sugar in TM 5 seconds on speed 3.
Then add butter and mix on speed 5 until mixture resembles bread crumbs.
Stir in egg for 6 seconds on speed 6 or until mixture forms a soft dough.
Press 2/3 of mixture into base of prepared tin.
Spread hot lemon butter in pan to within 1cm of the edge.
Crumble the remaining dough over the lemon filling.
Bake in preheated oven for about 30 minutes or until browned.
Allow to cool in pan.
Dust with icing sugar before serving.
