Ingredients

  • Base
  • 100 g raw sugar
  • Zest of 1 small lemon
  • 75 g Butter
  • 80 g plain flour
  • 40 gself raising flour
  • 25 g desiccated coconut
  • 1 tsp lemon juice
  • Filling
  • 100 g raspberry jam, (recipe in Everyday cookbook)
  • 80 g fresh, or frozen rasberries
  • Crumble
  • 250 g almonds
  • 2 tbsp raw sugar
  • 2 eggs

Recipe's preparation

  1. (Pre-heat oven to 180oC)

    • Weigh in sugar and add lemon zest and mill for approx 10 seconds on speed 9.
    • Weigh in butter and continue for another 10 seconds on speed 5.
    • Add flours, coconut, and lemon juice and combine for around 20 seconds on speed 5 (or until combined).
    • Press into greased/lined slice pan and bake for approx 15 minutes until slightly golden in colour (don’t worry that this is thin- it will rise!)
    • Allow to cool.
    • Weigh in jam and raspberries and combine for 3 seconds on speed 3. Spread over base. Clean TM bowl.
    • Weigh in almonds and mill for 20 seconds on speed 5.
    • Add eggs and sugar and combine for 3 seconds on speed 5.
    • Spread roughly over raspberry layer and bake for approx 15 mins (until golden). Allow to cool and cut into squares or fingers.

    The base was good, though I cooked it longer as I like it crisper. Filling was not great but I didn’t follow ingredients exactly. My problem was the topping. It looks like a coconut topping in the picture but my recipe only had almonds,sugar and eggs, so it was a grey coloured strange, unremarkable taste and texture. Was there supposed to be coconut in the topping? It doesn’t show in ingred on my iPad screen if that’s the case. Totally confused.

    Has anyone done this without Almonds? If so what did you replace it with??

     I'd like to make it lunch box friendly for school.

    I will have to make another one tomorrow as my husband has already eaten four slices and it hasn't even cooled down yet. Delicious slice. I only used 220 g almonds but used extra raspberries ( 120 g) . I might even try it with walnuts. Thank you.  tmrc_emoticons.)

    This slice took me back to my childhood. i used vanilla instead of lemon as I didnt have any on hand and it was really delicious. Great for kids school lunches.
