Ingredients
Lemon or Lime Zucchini Cake
- 250 grams zucchini
- 250 grams sugar
- 300 grams plain flour
- 1 tablespoon baking powder
- 120 grams olive/grapeseed oil or melted butter
- 2 eggs
- 80 grams Milk
- 1 teaspoon vanilla essence
- 1 lemon or lime, peel plus juice

Preheat oven to 180C (160C fan forced)
Chop zucchini into rough chunks. TM Turbo a couple of times.
Set aside, drain & squeeze dry.Rinse & dry TM bowl. Add sugar & peel. TM 10 secs, Sp 8
Add flour & baking powder. Turbo a few times to combine.
Add oil, eggs, milk, vanilla essence & lemon juice.
TM 30 secs, Sp 4-5
Add drained zucchini and TM Reverse Sp 4 until combined.
Pour into lined loaf pan.
Bake for 55 mins or until done.
Meanwhile make glaze made from 1 cup icing sugar mixed with lemon juice until smooth.
Once cool, drizzle with glaze and serve.

Lovely and light and nice lime flavour I reduced sugar to 125 gm which was plenty, substituted 50 gm of flour with LSA and substituted 50 gm of the zucchini with carrot. Instead of a cake/loan, I made 14 muffins so only cooked for about 20 minutes. Delicious. Thank you for the recipe.
