Recipe's preparation

  1.

    Put 395 g condensed milk

    200g licorice

    200g brown sugar

50g glucose syrup ( makes a smoother fudge)

    125g butter  into bowl

8mins 100° speed 3-4 ( will splash if your butter bits are big, but settle as it melts mc on)

    Scrape down sides

    20mins 110° speed 3.5

Add 200g white choc melts and mix 10 seconds speed 3

Pour into lined slice pan ( paper or glad wrap) let sit for 45mins

Cover with glad wrap and put in fridge to set.

NOTE: I have tried this with a few varieties of licorice and get the best results from good quality licorice from health food shop.

    TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I have been trying quite a few of the fudge recipes on this site and while this one has a nice texture the licorice flavour is sadly missing, it tasted like licorice until the white chocolate was mixed in at the end and that overpowered the licorice flavour. Going to try the recipe again with licorice oil flavouring to hopefully get a deeper licorice taste to the fudge.
